Ingredients
  

1 cup creamy peanut butter

½ cup unsalted butter, softened

¾ cup brown sugar, packed

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

½ cup chocolate chips

½ cup dried cranberries or cherries

¼ cup crushed sea salt (for topping)

Instructions
 

Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    In a mixing bowl, combine the creamy peanut butter and softened unsalted butter. Use a hand mixer or wooden spoon to blend until smooth and creamy.

      Add the brown sugar and granulated sugar to the mixture, and beat until light and fluffy, about 2-3 minutes.

        Mix in the egg and vanilla extract until fully combined.

          In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet mixture, mixing until just combined.

            Fold in the chocolate chips and dried cranberries or cherries gently into the dough.

              Spread the cookie dough evenly in the prepared baking pan, smoothing out the top with a spatula.

                Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

                  Remove from the oven and immediately sprinkle the crushed sea salt on top while the bars are still warm.

                    Allow the cookie bars to cool in the pan for about 10-15 minutes, then lift them out using the parchment paper. Let them cool completely on a wire rack before slicing into squares.
