8 large eggs

1 cup milk

1 cup shredded cheese (cheddar or your choice)

1 bell pepper, diced

1 small onion, diced

1 cup cooked breakfast sausage or bacon, crumbled

1 cup cooked and cooled hash browns (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cumin (optional)

8 large flour tortillas

Salsa or hot sauce (for serving)

Instructions
 

Prepare the filling: In a large skillet, sauté the diced bell pepper and onion over medium heat until softened, about 5-7 minutes. If using hash browns, add them to the skillet and cook until crispy. Set aside to cool.

    Scramble the eggs: In a large bowl, whisk together the eggs, milk, salt, pepper, and cumin (if using). In the same skillet, add the egg mixture and cook over medium heat, stirring gently until just set but still slightly runny, about 3-5 minutes. Remove from heat.

      Combine ingredients: In a large mixing bowl, add the scrambled eggs, cooked sausage or bacon, sautéed bell pepper, onion, and cheese. Mix until evenly combined.

        Assemble the burritos: Lay a tortilla flat on a clean surface. Scoop about 1/2 cup of the egg mixture into the center. Fold in the sides of the tortilla and roll it up tightly from the bottom to the top, securing the filling inside. Repeat with all tortillas.

          Wrap for storage: Wrap each burrito tightly in aluminum foil or parchment paper. This will help keep them fresh and make them easy to grab on busy mornings.

            Freeze or refrigerate: Place the wrapped burritos in a large zip-top bag or an airtight container. They can be refrigerated for up to 3 days or frozen for up to 3 months.

              Reheating instructions: To heat a refrigerated burrito, unwrap and microwave for 1-2 minutes, or until heated through. For frozen burritos, remove foil and microwave on high for 3-4 minutes, turning halfway through. Alternatively, you can bake them at 350°F (175°C) for 20-25 minutes until heated.
