2 cups rolled oats

1 cup nuts (almonds, walnuts, or pecans), chopped

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup Greek yogurt (plain or flavored)

1 1/2 cups fresh fruit (berries, sliced bananas, or diced mango)

Optional: 1/4 cup seeds (chia, pumpkin, or sunflower) for added crunch

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Make the Granola Base: In a large mixing bowl, combine the rolled oats, chopped nuts, cinnamon, and salt. In a separate bowl, whisk together the honey (or maple syrup) and melted coconut oil. Pour this mixture over the oat mixture and stir until everything is evenly coated.

      Form the Cups: Grease a muffin tin with cooking spray or line with parchment paper. Scoop the granola mixture into each muffin cup, pressing down firmly to create a cup shape.

        Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the granola cups are golden brown. Remove from the oven and let them cool for about 10 minutes before lifting them out with a fork or butter knife.

          Add Yogurt and Fruit: Once the granola cups have cooled completely, fill each cup with a generous dollop of Greek yogurt. Top with your choice of fresh fruit and a sprinkle of seeds, if desired.

            Serve and Enjoy: Serve immediately or refrigerate for later. These granola cups can be made ahead of time for an easy snack or breakfast option!
