1/4 cup cottage cheese

1/2 cup spinach, chopped

1/4 cup bell peppers, diced (any color)

1/4 cup cherry tomatoes, halved

2 tablespoons feta cheese, crumbled (optional)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh herbs for garnish (like parsley or chives)

Instructions
 

In a bowl, whisk together the eggs and cottage cheese until well combined. Season with salt and pepper to taste.

    Heat the olive oil in a non-stick skillet over medium heat.

      Add the diced bell peppers and cook for 2-3 minutes until they start to soften.

        Stir in the chopped spinach and cherry tomatoes, cooking for another 1-2 minutes until the spinach wilts.

          Pour the egg mixture into the skillet, stirring gently with a spatula to combine with the veggies. Cook until the eggs are just set, about 3-4 minutes.

            If desired, sprinkle feta cheese over the top just before serving.
