1 box of red velvet cake mix

1/2 cup (1 stick) unsalted butter, softened

8 oz cream cheese, softened

1 large egg

1 tsp vanilla extract

1 cup powdered sugar, for rolling

1/2 tsp baking powder

Pinch of salt

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, beat together the softened butter and cream cheese until creamy. Add in the egg and vanilla extract, mixing until well combined.

      Combine Dry Ingredients: In a separate bowl, combine the red velvet cake mix, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined. The dough will be thick and sticky.

        Chill Cookie Dough (optional): For easier handling, chill the dough in the refrigerator for about 30 minutes.

          Shape Cookies: Scoop out rounded tablespoons of the dough and roll them into balls. Then, roll each ball in powdered sugar until well coated.

            Bake: Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are set. The center will look slightly underbaked.

              Cool Down: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
