Ingredients
  

2 pounds boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 onion, diced

3 cloves garlic, minced

1 package (8 oz) cream cheese

1 packet taco seasoning (about 1 oz)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Avocado slices for serving (optional)

Shredded cheese for serving (optional)

Instructions
 

Prepare the Chicken: Place the chicken breasts in the bottom of the crockpot.

    Add the Veggies and Beans: Layer the black beans, pinto beans, corn, diced tomatoes, onion, and garlic on top of the chicken.

      Season: Sprinkle the taco seasoning, ground cumin, chili powder, smoked paprika, salt, and pepper over the mixture, ensuring everything is evenly coated.

        Cream Cheese: Cut the cream cheese into chunks and add it on top of the layers in the crockpot.

          Cook: Cover and cook on low for 6-8 hours or on high for 4 hours, until the chicken is fully cooked and tender.

            Shred the Chicken: Once cooked, use two forks to shred the chicken directly in the crockpot. Stir everything together until the cream cheese is fully incorporated, creating a creamy chili consistency.
