Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup plant-based milk (unsweetened almond or oat milk works well)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup hot sauce (such as Frank's RedHot)

2 tablespoons melted vegan butter (optional, for extra richness)

Fresh parsley or celery sticks for garnish

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper for easy cleanup.

Make the Batter: In a large mixing bowl, combine the flour, plant-based milk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Whisk the mixture until it forms a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's fully coated. Shake off any excess batter and arrange the florets on the prepared baking sheet in a single layer.

Bake the Cauliflower: Bake in the preheated oven for about 25 minutes or until the cauliflower is crispy and golden brown. You may want to flip the florets halfway through for even crispiness.

Make the Buffalo Sauce: While the cauliflower is baking, prepare the buffalo sauce by combining the hot sauce and melted vegan butter in a bowl. Mix well until incorporated.

Toss in Sauce: Once the cauliflower wings are baked, remove them from the oven and carefully transfer them to a large bowl. Pour the buffalo sauce over the wings and toss to coat thoroughly.

Final Bake: Return the coated cauliflower wings to the baking sheet and bake for an additional 10-15 minutes, or until the sauce thickens and the wings are extra crispy.

Serve: Remove from the oven and let them cool slightly. Serve hot garnished with fresh parsley or alongside celery sticks and your favorite vegan ranch dressing for dipping.
