Arbi or Taro roots are rich with carbohydrates, vitamins, minerals, fibre. It is a complete food with rich nutrition value added to it. It is good for digestive system, blood pressure, diabetes, skin health, eye vision, and prevents cancer as well. Though roasting is not the most healthy way to consume it, it is one of the yummiest ways to have it. It goes well with all kinds of rice varieties. I personally love with with curd rice. I am sure you will have your own favourite combination.

Ingredients

250 grams Seppankizhangu (Arbi) or Taro root
2 tbsp chilli powder
Salt to taste
Oil to cook

How to cook Seppankilangu roast recipe

Step 1: Boil the taro roots in hot water for 8 to 10 minutes in medium flame, make sure it doesn’t get over boiled.
Step 2: Peel off the outer skin and let it cool down for couple of minutes
Step 3: Add 2 tbsp of chilli powder and some salt to taste and mix it well.
Step 4: Let it marinate for 30 to 60 minutes
Step 5: To a heated pan add sufficient amount of oil to roast the arbi
Step 6: Add the marinated arbitration to heated pan and roast it evenly on all sides
