1 teaspoon Woolworths Select ground cinnamon
½ cup Woolworths Select walnuts, chopped
Icing
1 cup Homebrand icing sugar mixture
1½ tablespoons Woolworths Select full cream milk

Directions

1. Preheat oven to 200°C fan-forced
2. Sift flour and spice into a large mixing bowl, stir in salt and sugar. Make a well in the centre and add milk and melted butter. Mix, using a wooden spoon until thick, then use hands to form into a ball of dough.
3. Turn out onto a flour-dusted bench. Press out to a large rectangle. Using a rolling pin, roll into a 40cm x 24cm rectangle. For the filling, combine sugar, cinnamon and nuts in a small bowl. Scatter over dough. Roll up from long side. Cut into eight slices. Place on a baking paper-lined oven tray 1-2cm apart. Cover with a tea towel and stand for 10 mins.
4. Brush tops with a little extra milk. Bake for 20 minutes or until golden. Cool on a wire rack.
5. For the icing, combine icing sugar and milk in a medium bowl. Drizzle over cooled rolls.

Tip1: The tighter the dough is rolled, the higher the ratio of cinnamon sugar filling to dough and the more rings of cinnamon sugar you have.
Tip2: Flour your work surface and your rolling pin to help you roll the dough without it sticking.
Tip3: This is a quick cheat’s method with the self raising flour; traditionally these are made with yeast dough and can take up to 1½ hours with proofing.
